Baking Experiments: Lemon Cake

My friend and I like to think of ourselves as amateur bakers, so when we were bored recently we decided to experiment. My friend recently had a lavender cake (which she LOVED) and wanted to try and recreate that. Sadly, when we went to our local baking shop we couldn't find any lavender extract/flavoring or actual lavender. We ended up settling for lemon and this is what happened.

We mainly followed the cake in this recipe (which we found on pinterest... shocker!) but changed out the lemon juice for lemon oil we found at the baking shop.

To follow the instructions from the website, we first combined all of the dry and wet ingredients separately, then mixed them together.



Then, split it into two pans and put it in the oven


When it came out, instead of making a layer cake (which is normally what you would do) we each decided to frost them separately and each take one to taste test.



We just made a simple icing (milk, vanilla, and confectioners sugar) and then put some lemon zest on top to make it look a bit nicer.

It turned out really well (although we could've added more lemon oil in the cake and we could've put it in the icing instead of vanilla).
